I love to cook “Iron Chef” style — walk into the kitchen, grab whatever ingredients you have, throw it all together and munch down on something yummy.

One of my favorite guilty pleasure snacks that came about ala Iron Chef cooking is fried cheese. How tough is that?! Throw it in the pan, cook it and viola’!

Fried Cheese

1 handful shredded sharp cheddar
pinch of cyanne pepper
2 pinches powdered garlic

Heat a non-stick skillet on medium high. Dump the cheese in the center of the pan and carefully smooth the cheese out so it’s flat. Sprinkle with cyanne pepper and garlic powder. Once the cheese has melted and is hard/crispy on the bottom, use a spatula to flip the cheese over and let it continue to cook until crispy. Remove from the pan onto a plate.

Rice Cheese Onion Blob

1 chopped onion
2 T butter
2 T oil
1 cup cooked rice
1 cup sharp cheddar

Caramelize your onion in the butter and oil. Once the onion is golden and sweet, dump in the rice. Mix well and let the rice pop around in the pan for a minute or two. Turn off the heat and dump in the cheese. Fold the cheese into the mixture until it starts to melt, then dump onto a plate.
